The closure on April 20, 2010 of the John Morrell packing plant in Sioux City, Iowa marks the end of the industry that made Sioux City.
In the late 1850's James Booge started butchering hogs in Sioux City in a small building in Sioux City. By 1873 he had constructed a modern facility and was processing 123,000 head of hogs per year.
